"My Brandy No. 2 is a nod to my favourite old-world spirit - Calvados Domfrontais. Apples comprise 81% of the ingredients and hail exclusively from the Huon Valley. There is also a component of Napoleone Pears, harvested and processed by Goodtown and Banda from Kettering park in 2021. The ciders were slowly fermented over winter and twice distilled in my simple pot still before resting in a barrel for 3 years prior to bottling."
